Kansas State University offers an online master of science program for people who want to pursue a career in nutrition and dietetics. KSU offers the degree in collaboration with several other universities such as Iowa State University, Colorado State University and the University of Nebraska. In all, nine universities offer this online program, and students can take courses through any one of those institutions. Of the nine schools, the program at KSU is the largest and offers the most courses. The program requires 36 credit hours, including 15 hours of core courses and 21 hours of electives. The core courses include statistics and research methods.

Eastern Michigan University offers two online programs that prepare students for careers as nutritionists and dietitians. At the undergraduate level EMU offers the bachelor of science degree in dietetics. The degree program is requires 58 credit hours in the major field of study in addition to the general education requirements. Eastern Michigan also offers a master of science degree that is 75-to-77 credit hours and prepares students for licensing as a registered dietitian. Areas of study covered by the programs include nutrient metabolism, food systems, nutrition and the life cycle and alternative medicine.

A third online option for nutritionist degrees is the program at East Carolina University. ECU offers a dietetic internship program and the master of science degree in nutrition and dietetics. The master's degree program is a 33-credit-hour program that offers two options, one with a thesis and one without. In either case, nine hours of core courses are required. Areas of study covered by the program include human nutrition in metabolism and physiology, research methods, biostatistics and management in dietetics.
