The master of arts in history is a 36-credit program. All students select a specialization in the history of the Eastern or Western hemispheres. Students in the Eastern Hemisphere track choose from courses regarding the history of Africa, the Middle East, Europe and Asia. The Western Hemisphere track covers historical events in the Caribbean and North and South America. A thesis is required in order to graduate from the program and the thesis must be defended orally before a committee. In addition, degree candidates take a pair of comprehensive written examinations as part of the degree requirements and must be able to read at least one foreign language.

The master's degree program in industrial engineering offers students several curriculum options. Students who majored in industrial engineering as undergraduates can select from a generalist or specialist track in the discipline, while a third option is geared toward students who hold degrees in an engineering field other than industrial engineering. At least 30 credits are needed in order to complete the degree, and students have the opportunity to engage in independent study projects. Thesis students must successfully defend an original work of research, while nonthesis students need to pass an oral examination in lieu of submitting a written thesis.

The 30-credit biotechnology program is housed in UCF's College of Medicine. Students take core courses in biomolecular science and bioengineering and select from electives such as microbiology, tissue engineering and infectious processes. The required thesis is research based, and students must defend the thesis orally before a committee of at least three faculty members. In addition, master's degree candidates must pass a written comprehensive examination; students have two chances to take the exam.

Students in the master's degree program in physics can select from research areas including planetary science, biophysics and atomic physics. Degree candidates complete at least 33 credits and can select from a thesis or nonthesis option. Students who elect not to submit a thesis must take a research course and present a final report in lieu of the thesis. Students in the thesis track defend the thesis orally. Required courses cover topics such as experimental physics and quantum mechanics; students choose electives based on the specialty area of interest.

The master's degree in real estate can be completed by attending classes twice a week for 16 months, making it an attractive option for students who work full time.Thirty credit hours are required in order to graduate from the program; core courses cover topics such as accounting, finance, real estate law, and real estate market analysis. A capstone course is mandatory for all students and requires completion of a project that demonstrates knowledge of principles of real estate development.
