The French Culinary Institute (FCI) immerses students into six to nine months intensive programs. Designed to give students the most comprehensive training in the shortest amount of time, FCI offers four areas of study: pastry, bread, culinary and wine. In the pastry course, students focus on areas like pastry techniques, chocolate desserts and decorating with chocolate. In the bread course, students learn to bake flat breads, pastries and Parisian breads. In the culinary course, students learn knife skills, culinary techniques and all about fine cooking. The school's wine course teaches students how to pair wine with different foods.
The French Culinary Institute also offers advanced courses for students who want to gain additional knowledge in wine studies, restaurant management, culinary technology or food journalism.

The Institute of Culinary Education (ICE), founded in 1975, offers even to nine months programs in culinary management, culinary arts, pastry and baking, as well as hospitality management. The culinary management program teaches students about the laws that govern the restaurant business, how to create a menu and how to market a restaurant, as well as how to develop a concept and business plan for a restaurant. In the school's culinary arts program, students learn to develop their palates, properly use herbs and condiments and create complex dishes. Students who elect to take the pastry and baking program learn about baking theory and techniques and how to work in teams. In the hospitality management program, students learn business skills such as how to plan a menu and how to complete payroll duties.

The Professional Culinary Institute of California (PCI) offers programs that combine classroom work with on-the-job training. The school offers professional classes in culinary arts, baking and pastry arts, and hotel and restaurant management. In addition, the school also offers a sommelier certification where students learn about wines from around the world and how to pair them with meals.
PCI also offers courses for cooking enthusiasts who do not wish to pursue culinary careers and sponsors cooking camps for children and teenagers.
