The Culinary Academy of Austin offers two degree programs: professional culinary arts and pastry arts. The professional culinary arts program lasts for 15 months and is divided into five segments. The pastry arts program lasts 6 months. Both programs are conducted in a real commercial kitchen with standard industry equipment. In addition to class time, the school requires each student to take part in an externship to gain real-world experience. Admission to the school requires an application, letters of recommendations and a current resume. Students have access to scholarships if they meet certain qualifications.
The Art Institute of Dallas was established in 1964 and originally focused on fashion merchandising. The school now offers multiple degrees in the field of culinary sciences. An Associate of Applied Science degree is available in baking and pastry, and culinary arts as well as restaurant and catering management. A bachelor's degree in culinary management and a certificate in the art of cooking are also available. The school offers evening and weekend classes as alternatives for working students and offers some classes online. The school also offers study-abroad opportunities and internships.
The Culinary Institute LeNotre is owned by husband-and-wife team Alain and Marie LeNotre. Alain has 40 years of experience in the culinary field and is a certified pastry chef, candy and ice cream maker. The institute offers associate degrees in culinary arts, and baking and pastry. Students can earn diplomas in sous chef training and culinary arts specialties. The school mainly teaches through hands-on lab work and employs a fast-track system. Students can earn a single associate degree in 80 weeks or earn both associate degrees in 120 weeks. The institute also helps students find employment once they graduate.
The Culinary Institute of America has a campus in San Antonio, Texas. Its programs help promote the inclusion of Latin American cooking traditions in the culinary arts. A 30-week culinary arts certificate can be earned here with courses in baking and pastry skills, cuisines of the Americas, cuisines of Europe and the Mediterranean, gastronomy and culinary math. Smaller programs are also available focusing on appetizers, Mexican cuisine and other focused topics. These can be taken by themselves or in addition to the main certificate program.
