The Florida Community College at Jacksonville offers a 64-credit-hour dietetic technician associate's degree. Students who plan to move onto a four-year degree should pursue the science curriculum and those moving directly to employment should elect for the applied science track. Following general education courses in mathematics, humanities, behavioral science and speech, students begin 49 credit hours of professional courses. Topics include accounting, clinical nutrition, biology, safety and sanitation, menu planning, food production, staff, purchase and dining room management and regional food. Students participate in a three-credit internship where they receive hands-on food service experience.

Keiser University offers a 135-credit bachelors of science curriculum in dietetics and nutrition that satisfies education requirements to take the CADE Registered Dietitian (RD) exam. Students receive 21 credit hours of hands-on experience during their practicum courses in dietetics management, community health and clinical nutrition. Course topics include nutrition in health and exercise, food fundamentals, food production for institutions, dietary management, medical nutrition therapy and nutrition for health issues. The program includes 51 credit hours of core general education classes in mathematics, natural sciences, economics, computers, communication, English and behavioral science. Graduates leave prepared to work in clinical and food service environments. The Brooks College of Health at the University of North Florida offers a 98-credit bachelors of science program in nutrition and dietetics that includes a six-to-24-month post-graduation internship placement accredited by CADE. Pre-requisite courses include chemistry, nutrition, biology, anatomy, microeconomics and food preparation. The major curriculum covers concepts in nutrition education and therapy, psychology, health administration, food company marketing and life span nutrition. Students gain extracurricular hands-on experience volunteering for outreach projects with the UNF Student Nutrition Club.
