Los Angeles City College offers a two- or three-year Associate of Science degree program that teaches students how to be dietetic technicians. The CADE-certified program includes course work in nutritional and food science and requires candidates serve a 450-hour supervised internship at community centers, hospitals, health-care centers or in the food service industry. Students are eligible to take the dietetic technician exam administered by the ADA upon completion of their studies. Registered dietetic technicians are hired by hospitals, health care and community centers and public health agencies, among other organizations.

The Department of Nutritional Science at Penn State offers Master of Science and doctorate in philosophy degrees in nutrition. The CADE-approved programs focus on studying the optimal nutritional needs for the human body; nutritional assessment methods; the impact of food handling, processing and cooking on nutritional values; and improving community education and outreach. Through course work and research, students learn about human metabolism and regulation and the role of nutrition on molecular and physiological levels, as well as on behavior. The programs train students for careers in dietetic counseling, nutrition research and academics, public health education, intervention programs and the food sciences.

The Department of Nutrition and Food Service Systems at the University of North Carolina offers a post-baccalaureate dietetic internship for students who aren't interested in earning a master's or doctorate of philosophy. Graduates of the 10-month CADE-approved program are eligible to sit for the ADA exams that are required for certification. The program includes course work in nutrition and dietetics and a six-month internship at a hospital, long-term care facility, fitness center or county health department. The internship program is designed to prepare students to work as entry-level clinical, food service or community nutritionists.
