The University of Illinois Chicago offers five nutrition degree programs through its Department of Kinesiology and Nutrition, part of the College of Applied Health Sciences. They include bachelor's, master's and doctoral programs. Students participate in cutting-edge research in such areas as vitamin B-6 metabolism, nutrition and aging, and adult and childhood obesity. The department employs 23 core faculty members and educates around 600 undergraduate students and 60 graduate students annually.

Florida International University in Miami offers a coordinated program and didactic program in dietetics at the undergrad level, both leading to a Bachelor of Science in Dietetics and Nutrition. At the graduate level, the university offers Master of Science, Master of Public Health and doctoral degrees. The goal of the university's Department of Dietetics and Nutrition, according to its website, is to "train dietetic professionals who will promote nutrition as a critical part of disease treatment/prevention and integrate nutrition services into clinical, home and community-based health and social networks."

Cal State L.A. offers degree programs in exercise and nutrition, nutritional science and food science and technology. The programs prepare students to be competitive when entering the job market, in the private or public center. Students take courses in microbiology, community nutrition and maternal and child nutrition. The overall goal of the program is to promote the adoption of healthy lifestyles.
