Howard University's Division of Health Sciences, located in Washington D.C., offers four undergraduate degree programs in nutrition. The bachelor's of science degree program provides concentration options in community nutrition, dietetics and human nutrition and food. The curriculum includes general education courses during the first two years of the program, and during the final two years students focus on one of the program's concentration options. A three-semester verification program is also offered for students who wish to complete dietetic registration requirements.

The College of Allied Health Sciences at the University of Cincinnati, in Ohio, offers three nutrition programs. The food and nutrition program offers a bachelor's degree with concentrations in pre-medicine or exercise science. This program also offers three master's degrees in nutrition sciences, communication sciences and disorders and transfusion and transplantation sciences, and two doctoral degree programs in physical therapy and communication sciences and disorders. The dietetics program prepares students to become registered dietitians, with either a bachelor's degree or certificate. The nutrition science program offers a master's degree and is designed to complete the credentials recognized by the American Dietetic Association.

California State University in Los Angeles provides nutrition science programs that result in bachelor's degrees, master's degrees or certificates in either sports nutrition or alternative nutrition. The School of Kinesiology and Nutritional Sciences provides students with the opportunity to work at one of five campus-based clinics and laboratories, as well as six community-based outreach and development programs.
