Eastern Michigan University offers two different online master's degree tracks in the field of nutrition through its master of science programs. The first program simply leads to the master of science degree and is offered to all students who have obtained bachelor's degrees. The second program offered is one that leads to the master of science but also prepares students to become registered dietitians upon graduation. This second program is accredited by the Commission on Accreditation for Dietetics Education, an agency under the supervision of the American Dietetic Association. Areas covered by the programs include food and culture, nutrient metabolism, food systems management and alternative medicine in nutrition.

Pennsylvania State University is among the top universities in the nation. In 2010, "U.S. News & World Report" ranked Penn State as the No. 47 national university. In the field of nutrition, Penn State offers degrees at all levels, from the undergraduate through the Ph.D. At the master's degree level, Penn State offers a master of science degree in two forms. The traditional M.S. program requires a thesis, while the second degree track emphasizes public health and requires field experience instead. Students take a variety of seminars in nutrition and are required to take core courses in nutrient metabolism and readings in nutrition.
