Le Cordon Bleu Ottawa is an exclusive Canadian campus for Le Cordon Bleu culinary schools. Located in Canada's capital city of Ottawa, Ontario, Le Cordon Bleu provides students the opportunity to learn and develop French techniques of cuisine and pastry. The philosophy of this school is to teach through demonstrations, practice and coaching. Instructors are authentic French world class chefs. Students can obtain a certificate or diploma in either cuisine or pastry. For more ambitious students, the curriculum for the Grand Diplome combines both cuisine and pastry, while the Grand Diplome Professionnel is a 10-month program including an 11-week internship. Situated on the ocean's edge near downtown Vancouver, this school offers diploma programs in Culinary Arts and Baking Pastry and Arts. Both diploma programs are six months, full-time and 90 percent hands-on. The school offers students eight professional kitchens in which to learn. Programs at Pacific Institute of Culinary Arts are for those who want to be productive immediately upon graduation, so the school also offers job-search training. Many short courses are offered, such as cake decorating. Corporate Team Building programs are also available. Bistro 101 and Bakery 101 offer products for purchase made by students.
Located in the small city of Stratford, Ontario, Stratford Chefs School offers a two-year course. The first level focuses on knowledge and skill in the core areas, cuisine and pastry, and cooking methods. The second year involves applying the foundation of knowledge to restaurant practices. Students work in real restaurant kitchens and instructors are working restaurant professionals. The ratio of students to teachers is 12:1. Visiting celebrity chefs come from across Canada to teach students in the classroom and kitchen. Stratford Chefs School claims that it offers 100 percent placement for grads.
The Culinary Arts School of Ontario operates as The Chef School. As a boutique-style "restaurant-focused chef school", the focus is on classic cuisine. The Chef School is located in historic Elliot House in Mississauga, part of the Greater Toronto Area in Ontario. Modular learning offers textbooks, workbooks and projects, in addition to practical kitchen exercises, one topic at a time. The following diplomas are available: 18-week Culinary Arts, 18-week Culinary Management, 34-week Sous Chef and 51-week Professional Chef. Classes are small, with approximately 10 to 12 students per teacher. There is an on-campus restaurant where students are able to practice until they demonstrate understanding of topics and strengthen skills.
