The California Culinary Academy (CCA) is in San Francisco and offers classic culinary techniques through its Le Cordon Bleu College of Culinary Arts. This school has a staff of culinary professors who teach techniques focusing on global cuisine. The CCA Le Cordon Bleu School allows students to work together with experienced chef instructors who give the students the skills to pursue a professional career in the culinary industry.
Art Institutes are located across the country, including schools in California, Arizona, Florida and Colorado. The Art Institute's culinary arts program gives students practical experience in a real kitchen so they can learn cooking skills, while also learning various business aspects of working in the field. These business aspects include cost control, sanitation and safety, menu and beverage management, nutrition and kitchen management.
The Culinary School of the Rockies in Boulder, Colorado, offers students a variety of programs, along with the opportunity to participate in an off-site Colorado Farm to Table Externship, according to RWM.org. The classes in this culinary arts program teach students about food, ingredients, cooking techniques and dining. The school gives students a choice of four program types, including culinary arts, pastry arts and a part-time intensive chef track. The part- and full-time pastry programs can be completed in five to 15 weeks; the intensive part-time chef track is typically done in 18 weeks; and the full-time culinary arts program is completed over the course of six months.
Regardless of which vocational culinary school students attend, it is likely they will learn the preparation of a variety of cuisines, how to create a menu, how to manage a staff and the techniques to sell ideas, according to RWM.org. Training in these schools gives students the opportunity to train on the plants, animals and grains used to produce the food, giving them skills upon graduation to become a restaurant chef, pastry chef, restaurant manager, executive chef, catering chef or manager, events manager, or food and beverage manager.
