Culinary Art Colleges in Canada

Prospective chefs, bakers and restaurant owners in Canada can learn their craft from a variety of institutions. These schools combine the study of cooking methods with learning managerial skills to position graduates for immediate employment and potential opportunities for career advancement. Many of the schools provide apprenticeship programs with community or institution-affiliated restaurants to provide real-world experience. According to chef Kirk Bachmann, vice president of Academics at Le Cordon Bleu, “sound judgment, skill development, dedication, passion and pride are extremely important components of success in (the culinary) industry.”

    • Le Cordon Bleu culinary school features 15 locations around the world. In Canada, you can attend the school in Ottawa. The campus boasts a faculty of French Master Chefs; according to Le Cordon Bleu, this staff “allows for the traditions and experience of the top kitchens in France to be incorporated into the curriculum.” While attending Le Cordon Bleu Ottawa, students will hone their skills at the school’s restaurant, Signatures (winner of the Five Diamond Award from the Canadian and American Automobile Associations). The school doesn’t offer any Culinary Arts undergraduate programs at the Ottowa location--only certificate and diploma programs.

    The Art Institute of Vancouver

    • The Art Institute of Vancouver in British Columbia offers courses of study in media, design, fashion and culinary arts. Culinary programs include baking and pastry arts, culinary arts, restaurant ownership and restaurant business management. Students learn to work as part of a culinary team in on-site kitchens. The program prepares potential chefs to produce food quickly and in quantity. Beyond cooking, students learn about sanitation, kitchen safety, cost control, nutrition and management. For the more entrepreneurial student, students can also study human resources, marketing, accounting and customer relations, so they can one day manage and/or own a restaurant.

    Niagara Culinary Institute

    • Part of Niagara College in Ontario, the Niagara Culinary Institute provides a community partnership program with top regional chefs. The program allows professionals to work with culinary students to design menus and prepare food at the school’s Institute Dining Room. Making the most of its affiliation with Niagara College, the culinary students uses fresh herbs from the campus’ greenhouse and pair their fare with wines made by students in the Niagara College Teaching Winery program. Post-secondary education programs include culinary management and chef training. You can also apply for the 30-week apprenticeship programs for bakers and chefs. Continuing education programs include courses for dietary food service and health care food service workers.
