Chicago's Kendal College offers a Bachelor of Arts in culinary arts achieved through a four-year immersion in myriad courses exploring cooking fundamentals and techniques. The program places a keen emphasis on a variety of international cooking techniques, including those from Latin America and Asia. The Illinois Institute of Art Chicago offers three different culinary arts degrees: an Associate of Applied Science in culinary arts, a Bachelor of Applied Science in culinary management and a Professional Baking and Pastry certificate program. Chicago's French Pastry School offers two unique certificate programs. The institute's "L'Art de la Pâtisserie" program is a rigorous 24-week pastry and baking program aimed at preparing future culinary professionals. Topics discussed include food sanitation and baking theory, history and science. The school's less extensive, 16-week "L'Art du Gâteau" certificate course is focused primarily on cake decorating and baking. The hands-on course covers a broad array of cake-baking topics including wedding cakes, celebration cakes and specialty cakes.
