The Art Institute of Pittsburgh offers an online bachelor's degree program in culinary management. The culinary arts and restaurant management program teaches students both culinary theory and practice. Students in the program study baking and cooking along with management and communications skills. After completing this program, students can work as assistant food and beverage managers, assistant food service managers, prep cooks or line cooks. Students in the program take classes on a variety of topics such as grains, legumes and pasta; fish and shellfish; stocks, sauces and soups; and poultry and game. Courses additionally train students on buffet design, setup and presentations as well as the skills of braising, steaming and sautéing. Virginia College offers an online associate degree in culinary arts. This program is designed for individuals who already have formal training in culinary skills at a postsecondary level, such as through a diploma program, but want broader skills to increase their employment opportunities. Classes cover topics such as culture and cuisine, marketing/cost control, food science and buying from a cultural perspective. Students also study viniculture and beverage service, facilities management and menu planning and are required to complete a culinary externship. To get into the program, students must have completed a diploma program available at colleges such as Culinard, the Culinary Institute of Virginia College in Birmingham, Va. Virginia College is accredited by the Accrediting Council for Independent Colleges.
