Types of AA Degrees for a Chef

Graduates with an associate of art degree (AA) in culinary arts will be equipped with the necessary skills to find entry-level career opportunities at hotels, restaurants and in food service. Depending on the AA program, students may specialize in nutrition, management, pastry and baking, or classical and contemporary culinary techniques. The American Culinary Federation Educational Institute (ACFEI) accredits programs in culinary arts.
  1. Occupational Studies

    • Associate degree programs in occupational studies are designed to prepare culinary students for careers as corporate or private chefs, and as food sales operators, consultants, journalists and food stylists. This type of program typically runs for four semesters and provides students with a foundation in the practice and administration of food services. In addition to classroom and hands-on training, students will meet culinary arts professionals. Course highlights include topics in culinary terminology, restaurant management, high volume entrée preparation and culinary nutrition. Graduates from the course will receive a certificate of completion.

    Culinary Arts

    • AA programs in culinary arts provide students with a well-rounded background in all aspects of the food service and hospitality industry. The program generally runs for two years and includes both theoretical and hands-on training in culinary arts, such as contemporary and classical food preparation techniques. In addition, students also take general elective courses such as basic mathematics, writing and interpersonal communication. Students will also receive training in catering, hospitality, service and restaurant law. Course highlights include topics in wine studies, baking and pastry development, food safety and international cooking techniques. After completing their training, graduates from a culinary arts program are eligible for paid externships and full-time employment at fine dining restaurants or to work as private chefs.

    Pastry Arts

    • An AA degree in pastry arts combines theoretical and practical training in the use of equipment, techniques and creation of fine pastries and dessert preparation. Students receive classroom and hands-on instruction in the basics of pastry and baking techniques. This type of program generally runs for six to nine months and is offered in modules that combine basic and advanced techniques in pastry arts. The curriculum covers topics in baking breads, Danish, croissants and cakes, as well as candies, wedding cakes, frozen and hot desserts. Graduates from a program in pastry arts will be eligible to seek employment as pastry chefs at fine dining restaurants, hotels and luxury resorts.
