Trade Schools for Butchers

Butchers are responsible for preparing meat, poultry and fish in butcher shops and supermarkets. Although many prospective butchers receive on-the-job training, educational programs are available that provide hands-on training in the field. In addition to learning how to cut meats and other foods, students in these programs also receive training in how to purchase and prepare meats.
  1. State University of New York (SUNY) Cobleskill

    • SUNY Cobleskill (cobleskill.edu) offers a meat processing and food safety certificate program. The school operates an approved meat processing facility that teaches students about livestock processing involving chicken, beef, pork and lamb. Hands-on courses offer students an opportunity to learn about meat cutting, sanitation, food safety, portion control, knife handling and cutting accuracy and processing. In addition to admission into the program, tuition includes textbooks, cutting knife, boning knife and safety cutting glove.

    Eastern Oklahoma State College

    • Located in Wilburton, Eastern Oklahoma State College (eosc.edu) offers an Associate of Applied Science in Meat Processing/Food Safety. The program is two years and combines academic course work with hands-on training. Courses in the program include meat animal and carcass evaluation, meat processing and merchandising, food safety and sanitation, meat technology and meat merchandising. Students learn about live animal evaluation and the making of sausage and other meats. In addition to course work, students also must complete an internship.

    Colorado State University

    • The College of Agricultural Science at Colorado State University (colostate.edu) offers a meat science and food safety program. Courses in the program teach students about meat safety and quality, storage life, preparation and cooking, and meat-product handling. Students also learn about meat-animal growth and development, meat classification and grading, carcass composition, meat microbiology, nutritional aspects of meat and the relationship of meat consumption and human health.

    Hinds Community College

    • Located in Raymond, Mississippi, Hinds Community College (hindscc.edu) offers a meat merchandising programs that teaches students how to process and prepare fish, poultry, beef and pork. The program is one year and includes courses in the identification of meats, preparation of cuts and meat merchandising. Students receive hands-on experience in meat catering and learn about the latest technologies used in delis and retail meat markets. Opportunities also are available for students to learn about sales and pricing.
