The New York University School of Continuing and Professional Studies offers a summer course called Hotel Management Fundamentals, in which students learn the various ways hotels produce revenue. Additionally, students will learn about the financial, marketing, technological and operational systems employed at fine hotels. Students study topics that include hotel information systems, hotel service excellence, analyzing and reporting financials and controlling costs. This course is open to students in any NYU credit or degree program.
Cornell University School of Continuing Education and Summer Sessions offer a course entitled Hotel Operations Management: Tactics for Profitability, within the university's School of Hotel Administration. The course is available to sophomores, juniors and seniors, for three credits, and lasts three weeks. It focuses on business issues in the hospitality industry, including hotels, restaurants, resorts, food service businesses, casinos, clubs, cruise ships, clubs, transportation and tourism. Students study the primary business models and ownership structures in the industry, studying pricing, doing focused studies of individual hotel operations and using a hotel simulator to operate a virtual 250-room hotel.
Kendall College School of Hospitality Riverworks Campus in Chicago is structured in four quarters: spring, summer, fall and winter. Students take summer courses offered to matriculated students as part of the curriculum in the School of Hospitality. Students can apply to matriculate into the program throughout the year, since the college accepts rolling admissions.
Kendall College has a Summer Camp experience for teenagers considering a career in hotel management that will introduce them to the college's hospitality academic program and concentration in hotel management. The camp is for students ages 13 to 18. Campers can attend either a week-long day-camp program or an overnight program. Day campers attend courses every day and overnight campers stay in Kendall's residence hall. The overnight camp program includes supervised activities, such as attending Chicago theater, specialty dining and city tours.
The Les Roches International School of Hotel Management in Switzerland hosts study abroad programs during summer. In 2011, an academic program is offered entitled, Marbella Andalusian Gastronomy Summer Program. The Les Roches Marbella program gives students an in-depth look at southern Spanish culture and cuisine. For two weeks, students will spend time between culinary courses and excursions to traditional Spanish food sites, including wineries, a local Spanish brewery and an olive oil mill. Students will receive uniforms and utensils to use during the program.
