Bachelor's Programs in Viticulture and Enology

Viticulture and enology are the specialized sciences of wine making. Viticulture is the business of producing the grapes, while enology is the science of the actual fermentation and wine making process. Six major universities in the United States offer Bachelor of Science degrees in these specialties.
  1. California Polytechnic State University

    • Located roughly midway between San Francisco and Los Angeles, this university---usually called Cal Poly---offers a major in wine and viticulture through its College of Agriculture, Food and Environmental Sciences. Students practice the university's "Learn By Doing" approach with hands-on work in a 100-acre vineyard and winery.

    California State University, Fresno

    • Cal State, Fresno offers a Bachelor of Science degree in either Enology or Viticulture. Coursework for both covers the basic sciences and the management skills needed in the wine making business. Facilities at this campus in California's Central Valley include 150 acres of vineyards and a 50,000-gallon winery.

    Cornell University

    • Cornell students can major in Viticulture and Enology through the university's College of Agriculture and Life Sciences. Both viticulture and enology concentrations include studies tailored to the cooler climate of the New York state wine making region. Abundant internships are available for summer enrichment.

    Oregon State University

    • Oregon State offers a Bachelor of Science in Food Science and Technology with an option in Enology and Viticulture. A sampling of courses within this option includes plant pathology, weed management, wine production and food safety. Facilities include two vineyards and a pilot plant winery, located close to the university's campus in Corvallis.

    University of California, Davis

    • UC Davis offers a Bachelor of Science degree in Viticulture and Enology that gives students the skills and background needed for winery operations. It also offers outstanding research opportunities for students interested in learning more and improving the industry. The Davis campus includes a 120-acre vineyard and the Enology Cellar with more than 70,000 bottles of wine. The department also operates an experimental vineyard in nearby Napa Valley.

    Washington State University

    • This school, located near the Columbia River winemaking region, includes a viticulture and enology major as an option under the Bachelor of Science in Integrated Plant Sciences. Students gain practical experience while studying both the technical and basic scientific aspects of the winemaking industry. An experimental winery provides students with additional opportunities to participate in research.
