Schools for Dietitians and Nutritionists

Dietitians and nutritionists work in community and clinical settings to plan goal-oriented food programs for clients who need weight gain or loss, to manage hypertension or diabetes, or simply to create a more balanced diet. Requirements for licensing vary by state. Accreditation for education programs in dietetics comes from the Commission on Accreditation for Dietetics Education (CADE). The Commission on Dietetic Registration provides certification for Registered Dietitians (RDs). According to the Bureau of Labor Statistics (May, 2008) nationwide, dietitians and nutritionists earned a median salary of $50,590.

    • Students at Long Beach City College can choose one of two programs in dietetics. A two-semester, 11-credit-hour Dietetics Service Supervisor vocational certificate program qualifies graduates for California certification to work directing the food service operations of a health care facility. The two-year 29-credit-hour Dietetics Technician associate degree curriculum satisfies education requirements to take the American Dietetic Association exam. The school offers these flexible programs year-round at varying schedules in the day and evening. The college provides post-graduation job placement assistance.

    Northern Illinois University

    • The School of Family, Consumer and Nutrition Sciences at Northern Illinois University offers a bachelor's and master's degree program in nutrition and dietetics. Students receive 100 clock hours of hands-on experience planning and preparing meals in the residence hall food-service department. After completion of the bachelor's degree program, graduates can apply for an internship to satisfy requirements for the Registered Dietitian (RD) designation from the Commission on Dietetic Registration. The master's curriculum includes an internship approved by the Commission on Accreditation for Dietetics Education (CADE) and studies in the prevention of disease through medical nutrition therapy.

    University of Florida

    • The Food Science and Human Nutrition Department at the University of Florida offers bachelor's and master's degrees in dietetics. Students complete courses in biology, chemistry, nutrition and micro-biology to learn the relationships between food and disease and how particular foods affect body function. Graduates of the 120-credit-hour bachelor's program compete for a CADE-accredited internship. The master's program combines a Master of Science in Food Science and Human Nutrition with a minor in Family, Youth and Community Sciences. The curriculum and internship of the master's program satisfies the requirements to earn a Registered Dietitian (RD) certification from the Commission on Dietetic Registration.
