List the city where the anthology was published, followed by a colon. This information is usually located on the inside cover page of the book, or on the back cover. Add the name of the publisher and comma. If you cannot find this information in the book, you can usually find it online by entering the title of the anthology into a search engine. Finish with the year of publication and a period. If the anthology was published in 2006, then your finished reference will read:Billings, Lester (ed.) _Flying is for the Birds_. Knoxville: Letherson and Sons Publications, 2006.
