The Cornell University School of Hotel Administration (SHA) offers a Bachelor of Science in Hotel Administration, a Master of Management in Hospitality (M.M.H.) as well as a Master of Science and a Ph.D in Hotel Administration. Undergraduates must complete 69 credit hours of core SHA courses, two credits of physical education courses in their freshman year and 800 hours, paid or unpaid, working in a hospitality-related field. Students can fulfill this work requirement at the university's own Statler Hotel or at any other approved hotel. The intensive 12-month M.M.H. degree begins in May each year and can be completed entirely on the Cornell campus or jointly, with six months at Cornell and six months at the Cornell-Nanyang Institute of Hospitality Management in Singapore. Much like an M.B.A., the M.M.H. trains graduates to lead entrepreneurial ventures. M.M.H. students balance the required 29 credit hours of core courses with 15 credit hours in concentration credits like marketing management, operations and revenue management, and real estate finance and investments. M.S. and Ph.D. students must complete their coursework and write their theses or dissertations at Cornell. Undergraduate and M.M.H. applicants must schedule an interview with the Office of Admissions, which matters significantly in the application process. M.S. and Ph.D. applicants must take the GMAT within five years of their application.

Johnson & Wales University (JWU) offers undergraduates interested in hospitality two degree programs in Hotel and Lodging as well as in Restaurant, Food and Beverage Management. The school also has long-term relationships with employers like Marriott and Hyatt, which hire their graduates. Students in both programs must complete the required courses in their majors and courses in one of nine concentrations, six of which are management related. Second-year students in both programs must intern at one of JWU's practicum properties where students will rotate duties in different areas to learn all aspects of the hospitality business. Students with a GPA of at least 2.0 can apply through the Office of Experiential Education and Career Services for additional work experience. Hospitality students also can choose to earn some of their required credit hours abroad through programs coordinated through the Study Abroad Office located on JWU's Providence, Rhode Island, campus. Through the Early Enrollment Program, high school juniors can apply to start taking classes at JWU in their senior year.
