Many of Idaho State University's outdoor education courses are taught outside. Students will take classes in physical education and sport, outdoor leadership, wilderness first aid, outdoor risk management and liability, winter survival skills, river safety, advanced rock climbing and map, compass and backcountry navigation. Rock climbing and mountaineering classes are taught by instructors certified by the American Mountain Guide Association, and swiftwater river rescue, kayaking and kayak tour classes are taught by instructors certified by the American Canoe Association. The school offers Leave No Trace (LNT) courses, which promote responsible outdoor use and activity by demonstrating how to enjoy nature and not destroy it. Students taking the course become certified LNT trainers.

Georgia College and State University's outdoor education degree program prepares graduates to work in recreation, training, education, development and therapy settings. The program teaches movement skills, wellness, respect for diverse people groups and nature, and community service. Coursework includes general education classes such as English, math, and politics and society. Degree core courses include environmental education methods, basic outdoor education strategies, land and water outdoor pursuits, ecological connections in outdoor education, theories in outdoor education and challenge course program management.

Merritt College offers two outdoor education programs that prepare graduates to work in a variety of settings such as ecotourism, nature centers and schools. Students who complete the major course requirements are awarded a certificate. Those who complete the major course requirements as well as general education requirements will be awarded an associate in science (AS) degree in Ranger-Naturalist Outdoor Education. The program focus is environmental education, managing parks, and nature and cultural interpretation. Required classes include either introduction to ranger-naturalists outdoor education and environmental careers, or principles of ecology and intro to sustainable environment systems. Students will also take classes such as environmental racism and justice, intro to wildlife conservation, wetlands restoration, urban ecology and basic emergency medical technician. The program includes environmental education internships.
