The two-year Associate of Science degree in Nutrition at Fond du Lac Tribal and Community College prepares students for admission to the four-year undergraduate degree program in dietetics and the subsequent dietetics internship. Courses in the program include fundamentals of nutrition, microbiology, food safety and technology and human physiology and anatomy. General education courses are also included in the program, such as biology, chemistry and anatomy. The program is offered on both a full- and part-time basis to accommodate both daytime and evening schedules. The class sizes are small and daycare is available at the college.

Normandale Community College offers a two-year Associate in Applied Science Degree in Dietetic Technology. The program may also be completed in as little as one year through a fast-track option. The Dietetic Technology program prepares students to write the Commission on Dietetic Registrations' Examination for Dietetic Technicians. Graduates are eligible for entry-level work as well as continued academic advancement through a bachelor's degree dietitian program. Students participate in a thorough curriculum and clinical program. Courses include life cycle nutrition, food systems management and medical nutrition therapy. Clinical placements take place throughout the program to provide hands-on experience in the working environment. Applicants to the program must complete several general education courses including biology, psychology, sociology and chemistry.

The four-year undergraduate dietetic program at the University of Minnesota is accredited by the Commission on Accreditation for Dietetics Education. The program prepares students for entry-evel positions in the field as dietitians. Courses in the program include human nutrition, medical nutrition therapy, nutrition counseling and nutrition and metabolism. Graduates of the program are eligible to apply for a postgraduate dietetic internship program that is generally nine to 12 months in length. Applicants to the program must have obtained credit in several prerequisite courses including organic chemistry, principles of nutrition and animal and human physiology with a grade point average of at least 3.0. Prospective students who possess an undergraduate degree may complete this program in three years.
