Easy Meal Ideas for Students

College students away from home for the first time might rely on campus dining halls and fast food for most of their meals. However, these sources might lead to that dreaded "Freshman 15." Instead, students can find easy and healthy meal ideas they can make in little time. Cooking at home also saves money---students can cook large portions that they can save and reheat for another meal.
  1. Chicken Dishes

    • Chicken breasts are an easy and versatile item for college students to incorporate into their meals. Students can buy large bags of frozen chicken breasts and defrost them one by one for lunch or dinner. Use a portable indoor grill to grill a chicken breast for a healthy entrée. Season it with salt, pepper or even garlic salt for some flavor, and serve it with microwaveable vegetables.

      College students who have an oven in their apartment or dorm kitchen can bread chicken breasts. Dip them in an egg wash made of an egg and 2 tbsp. of water, and then dredge the breasts in bread crumbs. Bake them in the oven at 375 degrees Fahrenheit for 20 minutes or until the chicken is no longer pink.

    Wraps and Sandwiches

    • College students can put together a healthy, flavorful lunch in no time. Look for wraps and pitas for a twist on the typical white-bread sandwich. Pick up freshly sliced lunch meat at your local grocery store---anything from turkey and chicken breast to ham and roast beef will do. Fill the pita or wrap with a few slices of lunch meat, and add your favorite sliced or shredded cheese. Add your favorite vegetables to the wrap or pita as well: Shredded lettuce, sliced tomatoes, cucumbers, peppers or onions for some crunch and nutrition in your lunch. Pair your wrap or pita with a bowl of canned soup, fresh fruit salad or even bagged salad with a light dressing.

    Pasta Dishes

    • Even novice cooks can boil water and make pasta, so pasta dishes are an easy and foolproof dinner for college students. Spice up plain pasta dishes with sauces and meats that suit your tastes. Make classic spaghetti and meatballs in no time.

      As your pasta cooks, mix together 1 lb. ground beef, 1 cup breadcrumbs, 1 egg and 1/2 cup milk. Roll them into balls, and bake for 20 minutes at 375 degrees Fahrenheit. Mix the cooked pasta, meatballs and a jar of pasta sauce for a hearty, no-fuss meal.

      Melt margarine in a pan and add chopped garlic cloves. Top your linguine with this butter-garlic sauce for a flavorful meal. Choose from different pasta types, from ziti and rigatoni to elbow macaroni and penne, to mix up your pasta meals.
