The Culinary Institute of America offers an associate degree in culinary arts that teaches students classic and contemporary culinary techniques and cooking methods. The course runs for 21 months and offers instruction in American, Asian and international cuisine. Students will also learn about basic baking, food safety, menu planning, food writing and nutrition. The course finishes with an 18-week paid externship in three restaurants. The Spencer Institute offers a personal fitness chef certification course available online through a series of downloadable manuals, audio lessons and video instruction. The instructions and recipes offered by this course focus on low-fat or non-fat cooking and how to start a personal chef business. Students have access to a database of hundreds of restaurants and can request email coaching from the course's instructor. At the end of the course, students complete a multiple choice test on food safety, low-fat cooking and starting a personal chef business for their certification.
