How to Use Cream of Tartar to Thicken Ricotta Cheese

Cream of tartar is similar in function to baking soda. If you are either cooking with ricotta or using fresh ricotta, cream of tartar can help you to stabilize your ricotta in a thickened state or remain creamy, while you whip or process your ricotta.

      Add 1 tbsp. of cream of tartar to ricotta, before you whip it. This will help to stabilize ricotta while whipping, and will help it retain its original creamy texture, rather than becoming runny.

      Add a pinch of cream of tartar to canned ricotta. This will help prevent the ricotta from either becoming runny or developing crystals at room temperature.

      Gradually increase the amount of cream of tartar that you add to canned ricotta, without changing the taste of the ricotta. Cream of tartar, an acidic ingredient, has a salty taste.
