About the easiest seeds to germinate and grow are cress or mustard seeds. These tiny seeds are inexpensive and readily available from any garden store. They will quite happily grow on moistened kitchen paper. Place a few layers of paper into a shallow, waterproof container of some kind, dampen with water then sprinkle generously with seeds. Germination will occur within a day or two and the crop will be fully grown in 12 to 14 days.
According to Sprout People, mung beans are the most widely consumed sprout in the world. They are widely consumed in China and are easy and quick to grow. Short sprouts can be grown within two to three days, with thicker sprouts taking up to six. Rinse the beans thoroughly in plenty of water, then place them in a bowl with two to three times their own volume of water. Leave them to soak for 12 hours. Drain the water then leave your sprouts at room temperature and out of direct sunlight. Rinse and drain every eight to 12 hours until the beans have sprouted to the required length.
Wheat grass is the source of a high energy health drink and grows quickly and easily. An old piece of fleece blanket is an ideal growing medium. Cut a piece of fleece to fit a suitable shallow, waterproof container. Soak the fleece then sprinkle with the seed. It should sprout within a day or two and grow substantially in six to ten days.
Quinoa has become popular as a super food. It is packed full of vitamins and minerals and is quick and easy to grow as a sprout. Quinoa needs to be soaked for just a half hour before you leave it aside to sprout and grow. Like many other sprouts it is best rinsed and drained every 12 hours until you see suitable growth. Quinoa will have grown visibly in two to three days.
Nasturtium seeds are a good choice for growing flowers, though like many seeds they are widely used as salad sprouts. Plant the seeds in a seed tray or flower pot filled with compost. Water them in well and wait for them to poke through the compost which should happen in no more than three weeks. Once you've finished with them in the classroom you can plant them out and enjoy beautiful blooms in 10 to 12 weeks.
