The Natural Gourmet Institute specializes in teaching students how to cook health-supportive foods, with an emphasis on vegetarian and vegan options. The Institute offers two educational options: the Chef's Training Program and public classes.
The Chef's Training Program is a 619-hour diploma program into which students must be accepted. It moves students from basic cooking techniques to developing a deeper understanding of creating healthy and delicious vegan and vegetarian recipes. This program also provides some instruction on the preparation of seafood, organic eggs and organic chicken.
Public classes are open to any student who wishes to take them. These classes are offered most days of the week and range from topics such as basic knife skills to vegan cupcakery.

While the Institute of Culinary Education does not offer a degree program based solely on vegetarian cuisine, its curriculum covers vegetarian options, and its open enrollment schedule offers vegetarian courses. At the Miette Culinary Studio, students will learn how to create a variety of French, Indian and Italian dishes. While the studio is not exclusively vegetarian, it offers vegetarian courses. The studio's classes run in the evenings or on weekends and teach students how to prepare a full dinner menu, from appetizers to dessert. Specialized classes focus on brunch menus (including a dim sum brunch), baked goods and pastries, and Indian street food. The studio also offers private one-on-one instruction.
