Why the Amish school system go up to 12th Grade?

Amish schools generally do *not* go up to 12th grade. Their educational system typically ends around the 8th grade. After that, Amish children leave formal schooling and enter apprenticeships or vocational training to learn the skills needed for their adult lives within the Amish community. A 12th-grade education is seen as unnecessary and even counterproductive to their values of simple living and community-based work.
