Fresno City College offers seven dietary aide classes under its social sciences division career training. The classes are: principles of food preparation, nutrition and health, nutrition, sports nutrition, child nutrition, women's nutrition and nutrition and diet therapy. Although this is not a associate's or certificate program, the classes provide a comprehensive education for anyone interested in becoming a dietary aide. These classes cover subjects such as diet patterns through the life cycle; nutrients and ingestion; the effect of diet on physical performance; nutritional requirements of infants and children; nutrition care in disease; and basic food science and preparation techniques.
Sussex Tech Adult Division, a continuing education institution in Georgetown, Delaware, offers a 156-hour dietary assistant certificate program that trains students in the skills necessary to work in health care facilities, such as acting as liaisons between patients and the dietary staff, and performing service and food production work. The program includes a national certification examination and educates students on topics such as the medical profession, computer applications, career development, nutrition and institutional food service.
The Community College of Allegheny County, with four campuses in western Pennsylvania, has developed a two-semester dietary manager certificate program accredited by the Commission on Accreditation for Dietetics Education (CADE). The school trains students for jobs in health care facilities, community nutrition programs and food service organizations. First semester classes include dietetic and food service orientation, nutrition assessment, foods, fundamentals of nutrition and human resource management for dietetics. Second semester classes include medical terminology, medical nutrition therapy and food protection certification. A summer session is also required and consists of a dietetic practicum seminar and a supervised practice class.
Orange Coast College, in Costa Mesa, has created a four-semester Associate in Science Dietetic Technician degree that gives students the choice of specializing in either nutrition care or food service management. Graduating students will be qualified to sit for the National Dietetic Technician Registration exam and become members of the American Dietetic Association. Classes covered in the four semesters include patient care, quantity foods preparation, nutrition, sanitation and safety, medical terminology, life cycle nutrition and food production management.
